Omaggio a Gillo Dorfles connects San Salvatore 1988’s Aglianico with the celebrated artist’s relationship with Paestum. His works become labels for a wine conceived as a meeting of culture and place. Selected grapes come from Cannito, in Capaccio Paestum, where clay and limestone soils support Guyot-trained vines. Manual harvesting precedes stainless steel fermentation and maturation in French oak. This is a structured red conceived with ageing in mind, retaining a close connection to the landscape and history of Cilento while carrying a distinctly personal artistic dedication on its bottle.
