Description

Sébastien Daviaux’s Blanc de Blancs Millésimé 2017 comes exclusively from Chardonnay grown in the Grand Crus of Chouilly and Cramant in the Côte des Blancs. The vines grow on soils where chalk reaches the surface and are cultivated with tillage. Winemaking takes place in stainless-steel tanks and includes malolactic fermentation. Tirage in April 2018 begins the process of second fermentation and bottle maturation. Extra Brut dosage completes this interpretation of a single harvest, built around two neighbouring vineyard origins and one grape variety in the finished wine.
