Description

Domaine Servin Chablis Premier Cru Vaillons is a Chardonnay from the left bank of the Serein, on Kimmeridgian soils alternating limestone and clay marl with small fossil shells. The vines are trained using double Guyot. Vinification and maturation take place in stainless-steel vessels, used throughout the wine’s journey in the cellar without a period in wood. Its general profile is dry, lively and persistent, with a clearly defined mineral character. Flint and gunflint nuances may emerge with development, characterising this interpretation of the cru.
