Matas Altas Blanco explores the white-wine side of Stratum, Bodega Cerrón's project at Fuente-Álamo in the highlands of Jumilla. Macabeo and Airén are joined by other local white varieties, preserving the diversity of traditional vineyards. The grapes come from old ungrafted vines in the Fortaleza area, growing at altitude on limestone soils containing sand and marl. Harvesting is manual, and the cellar approach involves fermentation and maturation in large wooden vessels. The cuvée connects its choice of grapes with the character of the soils and the village's vineyard heritage.
