Bourgogne Rouge introduces Sylvain Cathiard's work through a small Pinot Noir parcel planted in 1987. Even at this level of the range, careful vineyard practices are matched by a precise sequence in the cellar: destemming, cold maceration and fermentation with indigenous yeasts. The wine rests in previously used barrels, limiting the influence of new wood, and is bottled without fining or filtration. This regional expression offers an introduction to the family's methods, built around the origin of the grapes and a consistent approach from vineyard to finished bottle.
