Description

Les Croix Blanches brings together Pinot Noir and Gamay from a small parcel in the commune of Nuits-Saint-Georges. Planted in 1980, the vines grow in light, silty soil containing some clay. The cuvée follows Sylvain Cathiard's careful cellar approach: destemmed fruit, cold maceration and spontaneous fermentation in tank. Maturation takes place in used barrels before bottling without fining or filtration. This combination of grape varieties offers a different perspective on the family's vineyards while maintaining the same attention to provenance and continuity between work in the vines and the cellar.
