Les Dames Huguette takes Sylvain Cathiard into the Hautes-Côtes de Nuits, where Pinot Noir roots into thin soil with a high limestone content. The plantings date from between 1970 and 1995. The grapes are fully destemmed and undergo a cold maceration before fermentation with indigenous yeasts. Maturation takes place in barrels, and the wine is bottled without fining or filtration. The particular character of the parcel provides the starting point for this interpretation of Burgundy's higher hills, bringing a clearly defined vineyard origin into the family's wider collection of wines.
