Description

A southeast-facing exposure and fine gravel containing fragments of oolitic and Comblanchien limestone distinguish Aux Thorey within Sylvain Cathiard's range. The Pinot Noir comes from a 1953 planting tended with sustainable and organic practices. Vinification involves complete destemming, cold pre-fermentation maceration and fermentation with indigenous yeasts. Maturation takes place in oak before bottling without fining or filtration. The identity of this Nuits-Saint-Georges Premier Cru therefore rests on a specific geological setting and a mature vineyard heritage, carried through into the family's consistent and carefully defined approach in the cellar.
