Description
Romanée-Saint-Vivant represents a particularly old part of Sylvain Cathiard's vineyard heritage: the Pinot Noir comes from a small parcel planted in 1919. These vines are tended using sustainable and organic practices, matched by a precise cellar approach. The grapes are destemmed and cold-macerated before fermentation with indigenous yeasts. After maturation in oak barrels, the wine is bottled without fining or filtration. This bottling is tied to a small holding within one of Vosne-Romanée's great climats, where the history of the vineyard makes an essential contribution to the cuvée's identity.
