Aux Malconsorts stands out within Sylvain Cathiard's range for its deep red clay soil and Pinot Noir vines planted in 1972. Sustainable and organic vineyard practices underpin work in this distinctive Vosne-Romanée Premier Cru. In the cellar, destemming and cold maceration are followed by spontaneous fermentation in tank, then maturation in oak. Neither fining nor filtration is carried out before bottling. The cuvée thus connects a clearly defined geological origin with a sequence of winemaking choices that keeps the grapes and their particular place of origin central to the finished wine.
