Sylvain Pataille's Les Auvonnes au Pépé comes from a small Aligoté Doré vineyard planted in the 1930s and once owned by his grandfather. The slope faces east at around 250 metres above sea level, on clay and marl containing small limestone fragments. Vertical pressing precedes fermentation with indigenous yeasts and maturation in used barrels and demi-muids. Its name preserves both family memory and the site's agricultural past, once associated with oats. This is a single-vineyard interpretation of Aligoté, rooted in old vines and a precisely identified origin.
