Tenuta delle Terre Nere’s Calderara Sottana 2021 is pure Nerello Mascalese from Contrada Calderara in Randazzo. On Etna’s northern slope, between 600 and 650 metres, old vines root into particularly stony volcanic soils. Temperature-controlled alcoholic fermentation is followed by spontaneous malolactic fermentation and maturation in French oak. For this vintage, the estate’s technical sheet specifies fourteen months in wood and a subsequent period in stainless steel. Ripe fruit and spice accompany a full, structured palate, with a substantial yet supple tannic presence that gives the wine depth and a clearly defined texture.
