Theulot-Juillot's Crémant de Bourgogne Brut is a Blanc de Noirs made from Pinot Noir harvested at Mercurey in a Bourgogne Côte Chalonnaise parcel. The estate began producing it in 2004, managing the stages from picking through the development of effervescence; disgorgement is entrusted to a specialist in Rully. Pressing and low-temperature vinification accompany a wine with substantial texture and suggestions of red fruit. The bubbles are light and fine. A restrained dosage at disgorgement keeps the profile focused on freshness and clear fruit expression.
