Description

La Pucelle is Thomas Perseval’s interpretation of Meunier, sourced from an old parcel at the foot of the hills around Chamery. A northeastern exposure and sandy, limestone-rich soils define the origin of this selection within the estate’s organic farming approach. After pressing, the juice ferments spontaneously in previously used barrels, and the wine remains on its lees before the second fermentation. Winemaking avoids fining and filtration, while manual disgorgement without dosage maintains the Brut Nature style. The cuvée focuses attention on one grape variety and the particular character of the place where it is grown.
