Tollot-Beaut's Chorey-lès-Beaune is a Pinot Noir from the plain below the Côte d'Or escarpment. It comes from vines planted between 1992 and 1998 and matures in French oak pièces, including a proportion of new barrels. The family began planting vineyards in the village in the late 1880s under François Tollot. Successive generations gradually expanded their holdings into Savigny-lès-Beaune, Aloxe-Corton and Beaune. This cuvée retains the Chorey name on its label, preserving a connection with the village where the family's winegrowing history began.
