Toro Albalá’s Centenario Amontillado is a Pedro Ximénez wine originating from a selection Antonio Sánchez reserved for Holy Week celebrations. Its development combines biological and oxidative maturation, with prolonged static aging in cask. In the glass it is amber with copper highlights. The profile suggests old wood, tobacco and spices, accompanied by varnish-like nuances associated with its evolution. The palate is very dry and persistent, with acidity, salinity and a noticeable tannic element. Artichokes, asparagus, game, smoked foods and mature cheeses can accompany its pronounced character.
