Toro Albalá’s Centenario Palo Cortado comes from a cask selected among the winery’s reserves to represent this style in its centenary project. Made from Pedro Ximénez, it combines a biological phase with prolonged static oxidative maturation. The amber colour shows copper and green highlights. Tobacco, wood, spices and nuts appear on the nose, with a citrus nuance. The palate is dry and broad, supported by acidity, salinity and a slight tannic and bitter element. Braised meats, lamb and oily fish provide suitable accompaniments for its structure.
