Don PX Collection brings together historical Toro Albalá vintages, presented as individual expressions of Montilla-Moriles Pedro Ximénez. The grapes are dried in the sun to concentrate their sugars before pressing. Time in wood extends their evolution while retaining the identity of each harvest. The range brings together crops separated by many years, selected for bottling after prolonged development in the cellar. It is a collection of sweet wines centred on grape variety, drying and maturation, with each vintage retaining its own aromatic character and a different period of aging.
