Description

Miut El Jabonero comes from Pago de Benavente in the Sierra de Montilla, using old bush-trained Pedro Ximénez vines. The soil is chalky albariza of Cretaceous origin, locally described as antehojuela. Vineyard management involves shallow cultivation, organic fertilisation and pruning aimed at maintaining the balance of the plants. In the cellar, terracotta amphorae and French oak barrels are used for fermentation. Subsequent maturation on fine lees includes bâtonnage. This combination of place, old vines and cellar work defines Toro Albalá’s white wine within the Montilla-Moriles appellation.
