Toro Albalá’s Miut L’Assemblage combines Pedro Ximénez from Pago de Benavente in the Sierra de Montilla with fruit from Moriles Altos. The two locations have different soils: Cretaceous albariza and layered limestone-silica ground of Oligocene origin. Vineyard management involves shallow cultivation and manual work to maintain the balance of the plants. Fermentation takes place in stainless steel, followed by maturation on the lees. This Montilla-Moriles white is built around the meeting of two environments, combining the Sierra’s freshness and mineral element with the substance and more pronounced character of Moriles.
