Description

Miut Santa Magdalena interprets Pedro Ximénez from Moriles Altos as a white wine closely associated with its vineyard. The fine, layered limestone-silica soils are described as tosca hojaldrada and date from the Oligocene. Vines are trellised and trained to a Royat cordon; shallow cultivation and organic fertilisation accompany management aimed at limiting production. Fermentation uses terracotta and French oak, followed by time on the fine lees with bâtonnage. Toro Albalá’s cuvée therefore highlights a distinct environment within Montilla-Moriles, where soil and vineyard practices form an essential part of its identity.
