Poley Amontillado en Rama 35 Años comes from Toro Albalá’s founding solera, started at Lagar del Carmen in 1922. Maturation begins beneath flor in American oak; as the veil gradually weakens, the wine enters its oxidative phase. Its amber colour has copper highlights, while the profile combines spices, evolved wood and pastry-like nuances. The palate is dry and incisive, saline and persistent, with a bitter element on the finish. Its character suits asparagus, artichokes, game and tuna preparations, keeping the long period of development at the centre of the experience.
