Toro Albalá’s Poley Fino del Lagar en Rama 10 Años begins with selected Pedro Ximénez musts in Montilla-Moriles. Its alcohol develops naturally, and the wine matures beneath flor in the criaderas and solera system. The stated ten-year period builds a profile of almond, hazelnut and bread crumb, with suggestions of hay, olive and toast. Its straw colour shows golden and green highlights. The palate is dry, broad and silky, with persistent bitterness and a saline finish. Oysters, cured ham and Iberian charcuterie complement this character.
