Description
Toro Albalá’s Poley Fino Pasado en Rama 15 Años matures in the criaderas and solera system of Montilla-Moriles. Prolonged development beneath the flor veil defines its course; in the later years the veil weakens, allowing the first oxidative traits to emerge. Its deep golden colour has copper and green highlights. Almond and yeast are joined by hazelnut and toasted notes, while the palate remains dry, enveloping and saline. Served cool, it accompanies tapas, cured ham, mature cheeses and rice or meat dishes through its persistence and savoury character.
