Toro Albalá’s Poley Oloroso en Rama 15 Años is made solely from Pedro Ximénez and undergoes oxidative maturation in the criaderas and solera system. Its fifteen-year development produces a mahogany colour with old-gold highlights. American oak aromas intertwine with toffee, smoke, vanilla, caramelised nuts and ripe fruit. The palate is dry and supple, with a marked saline impression and an elegant bitterness that extends the finish. Its structure accompanies meats in sauce, stews, cheeses and vegetables such as artichokes and asparagus, reflecting the wine’s developed savoury character.
