Toro Albalá’s Poley Pedro Ximénez is a sweet Montilla-Moriles wine made from sun-dried grapes. After picking, the asoleo process concentrates sugars and prepares the bunches for pressing; the wine then rests for more than a year before bottling. In the glass, its amber colour shows copper highlights. The aromatic profile suggests raisins, figs, honey and caramel, with a subtle vegetal note that lightens the impression of sweetness. Its texture is silky, accompanied by moderate acidity. This character lends itself to chocolate desserts and cheesecakes.
