Description

An Extra Brut Blanc de Blancs from Ulysse Collin made in Congy (Coteaux du Petit Morin), produced entirely from Chardonnay from the small 0.62‑ha parcel called “Les Enfers.” Spontaneous fermentations in Burgundian barrels and extended lees aging (several years) with very low dosage give the wine a mineral drive, citrus and orchard fruit notes, and a rich brioche-like texture. The overall profile is concentrated and saline, finishing on chalk-tinged minerality.
