Les Roises is an Extra Brut Blanc de Blancs from Ulysse Collin made entirely from Chardonnay. It comes from a tiny monopole vineyard in Congy, in the Coteaux du Morin (Côte de Sézanne), and is released as a non-vintage cuvée. The wine shows concentrated texture and pronounced mineral tension; extended lees ageing brings brioche and almond nuances balanced by crisp acidity.
