Vignoble de Pauline Auxey-Duresses Les Rondières comes from Pinot Noir planted in 1972 on marl and limestone soils. Grapes are hand harvested and sorted in the vineyard and on a vibrating table, then fully destemmed. Cold maceration precedes fermentation with indigenous yeasts, accompanied by pumping over. The wine undergoes malolactic fermentation and maturation in barrels before blending in tank and bottling by gravity. Red-fruit notes accompany a fruity, balanced and supple palate, with a juicy texture that shapes its overall expression.
