Vignoble de Pauline Saint-Romain Le Bas de Poillange is a Chardonnay from a parcel planted in 1988 on clay-limestone soils. Hand harvesting is followed by two stages of sorting, pneumatic pressing and settling of the juice. Alcoholic fermentation, malolactic fermentation and maturation take place in barrels without lees stirring; handling is by gravity. The wine combines roundness and minerality with floral notes and clearly present freshness. The finish has tension and delicate saline nuances, completing a profile balanced between texture and liveliness.
