Description
Von Payr Chardonnay Riserva comes from Appiano Monte in Alto Adige, from a vineyard at approximately 510 metres above sea level on limestone-gravel soils. The vines were planted in 2004. The must ferments in French oak barriques, and the wine remains in contact with its lees before continuing maturation in large casks. Its profile combines fruit with a savoury freshness, while the palate shows creaminess and fullness. Ageing in wooden vessels of different sizes therefore accompanies a structured interpretation of Chardonnay from this hillside site, retaining the connection between vineyard setting and cellar work.
