Description

Fidèle is Vouette et Sorbée’s Blanc de Noirs, an expression of Pinot Noir grown in the Côte des Bar around Buxières-sur-Arce. The limestone and clay soils of this part of the Aube, together with biodynamic vineyard work, form the starting point of the cuvée. Ripe grapes are traditionally pressed, and the juice ferments with indigenous yeasts in previously used barrels. A proportion of reserve wine accompanies the principal harvest without obscuring its identity. Winemaking without filtration and disgorgement without dosage complete an approach centred on the substance of Pinot Noir and the origin of the fruit.
