Description

William Downie Cathedral is a Pinot Noir assembled from multiple vineyards across Victoria, often including fruit from Mornington Peninsula and King Valley. The fruit is destemmed and fermented with native yeasts in a mix of wooden and stainless vessels, with limited extraction and maturation largely in stainless steel prior to bottling. Aromas show wild red berries, subtle herbal notes and gentle spice; the wine is light-to-medium bodied with bright acidity and soft tannins.
