Description

Yvon et Laurent Vocoret's L'Homme Mort Premier Cru is a Chardonnay Chablis grown on clay-rich, stony ground formed from Kimmeridgian colluvium over marl. The estate cultivates its soils and abandoned chemical weedkillers in 2009. In the cellar, light static settling retains sufficient fine lees for natural alcoholic and malolactic fermentations. Maturation takes place in stainless steel, using small vessels to keep parcels separate. The approach seeks freshness and character. Scallops and fish such as turbot and monkfish are suggested pairings for this particular Premier Cru cuvée.
