Description
Yvon et Laurent Vocoret's L'Homme Mort Vieille Vigne is a Chardonnay Chablis Premier Cru from a small parcel of mature vines. The clay-rich, stony soils derive from Kimmeridgian colluvium over marl. Work includes horse ploughing, manual trimming and hand harvesting. Following light settling, alcoholic and malolactic fermentations occur naturally; vinification uses five-hundred-litre barrels, continuing a family practice. The cuvée is therefore distinguished from the stainless-steel version by its vineyard and vessel. It can accompany scallops, turbot and monkfish, served at around twelve to thirteen degrees.
