Description

The Amarone della Valpolicella Classico of Zýme, Celestino Gaspari's winery in San Pietro in Cariano, is made only in the best vintages. The grapes dry naturally for three months and ferment with native yeasts in steel and concrete; the wine then matures five years in large Slavonian oak casks and one more in bottle. The 2018 offers morello cherry, dried plum, sweet tobacco, liquorice and white pepper.
