Description

La Mattonara is an Amarone della Valpolicella Classico Riserva from Zýmē, vintage 2001. The wine is a blend of Corvina, Corvinone, Rondinella, Oseleta, Croatina and Molinara sourced from historic vineyards in the Negrar and Sant’Ambrogio area. Grapes undergo roughly three months of appassimento, spontaneous fermentation in concrete tanks and nearly nine years of ageing in Slavonian oak casks and tonneaux, followed by bottle ageing before release. The wine shows a high alcohol level (about 16%) with moderate residual sugar.
